Hello! 

I'm Alecia, a nutrition educator and whole food plant-based cook. I teach nutrition and cooking classes for those interested in eating healthier in order to prevent or reverse chronic diseases such as heart disease and diabetes. And,  if you have never cooked before, these classes are for you!

Welcome to Veggie Versed -  Giving you the knowledge of how to eat for optimal, evidence-based nutrition.  The Food for Life classes I teach were designed by the Physicians Committee (PCRM), offering valuable insights into how specific foods and nutrients are essential to your overall health. Participants enjoy cooking demonstrations of delicious recipes while gaining practical skills to integrate healthful habits into their daily routines. Join us in a supportive and motivational environment, empowering you to take charge of your health, one meal at a time.

Why I teach Whole Food,
Plant-Based  Cooking

I was a reluctant cook until I discovered the transformative power of a whole foods, plant-based diet. Today, as a licensed Food for Life Instructor and nutrition educator, I am passionate about helping others take control of their health while enjoying delicious, easy-to-make meals.

Initially drawn to a whole food, plant-based (WFPB) lifestyle to manage weight during menopause, I quickly realized its potential to prevent and even reverse chronic diseases. Inspired by my own progress, I began eliminating other addictive substances from my life—including alcohol, processed sugar, coffee, and oil.

My commitment deepened after my partner underwent a six-way heart bypass surgery in his 50s. Although doctors warned he’d likely need another procedure within a decade, I dove into research and discovered how food could reverse what has been labeled  “hereditary heart disease.” Together, we adopted a 100% whole food, plant-based lifestyle and within just one year my partner not only avoided further surgery, but completely reversed his heart disease.

I created Veggie Versed because I believe that knowledge is power -  and I want you to know the power of your plate.

 

I share information about whole-food plant-based nutrition as a way to help prevent and even reverse many chronic lifestyle diseases. Moreover, I believe compassionate eating leads to great clarity of thought and creativity and it is my desire to help spark your full potential - starting with taking control of how you fuel your beautiful body. Let me share with you what I've learned so that you, too, can live your best life.
